Bee Pollen

Organic Bee Pollen from Romania
Our organic Romanian bee pollen is collected in an area within the unspoilt, beautiful Carpathians mountains, in remote areas in the region well-known as Transylvania. The “Apis melifica” bee is used as it has a gentle nature, so beekeepers can work in the bee yards without any protection. The keepers tend to manage about 100 bee colonies. The pollen is harvested from a large, unpolluted rural area, with a wide variety of fauna, so there is a potential source of 1000 different flowers – as a result, the composition of the pollen, and therefore its properties, can be very variable depending on the season and where it is sourced. All pollen has general characteristics, determined by the common nutrients and/or active compounds found in it (carbohydrates, amino acids etc). The specific properties of a pollen are given by active constituents gathered from a specific plant.

 The Barleygrass and Wheatgrass plants are grown slowly in pristine, unpolluted areas.  They are harvested when the young leaves are at their most nutritionally rich and fertile phase.  The leaves are then cleaned, dried and milled into a fine powder.

The Novel Foods Act of 1997 was originally devised to protect consumers from genetically modified foods. Since then, genetically modified foods have been removed from the Novel Foods List, but the law still exists and means that any food not previously proved to be substantially marketed in the EU before 15th May 1997 may not be marketed as a food. These products are only available for animal use or for arts and crafts.
Liquorice Root
Liquorice is the root of Glycyrrhiza glabra from which a sweet flavour can be extracted. The word "liquorice" is derived from the Old French word "licoresse" - the Greek word "Glukurrhiza" means "sweet root", The liquorice plant is a herbaceous perennial legume native to southern Europe and parts of Asia, such as India. It is not botanically related to anise, star anise, or fennel, which are sources of similar flavoured compounds. Liquorice flavours are used in sweets, or as sweeteners, particularly in European and Middle Eastern countries. Much of the sweetness in liquorice comes from glycyrrhizin, which has a sweet taste, 30-50 times the sweetness of sugar. The sweetness is very different from sugar, being less instant, tart, and lasting longer. Liquorice extracts have long been used in herbalism and traditional medicine.

Purple Corn Kernels
Purple corn or purple maize is another name for “Blue corn”, a variety of flint maize originating from Meso-America. Traditionally in the Andes, the kernels of purple corn are soaked in hot water to yield a deep purple colour for foods and beverages, a practice now recognized for its industrial uses as a colorant. Common in Bolivia, Ecuador and Peru, purple corn is used in “chicha morada”, a drink made by boiling ground purple corn kernels with pineapple, cinnamon, clove, and sugar, in “mazamorra”, a type of pudding and "Api", a smoothie served hot and sometimes called "Inca's dessert". The purple pigments are anthocyanins. The outer layer of the kernel contains a ten times higher content of anthocyanins than the rest of the kernel.

Organic Maca
Our Maca comes from farmers in the Province of Junin, from the “Association of Producers of Organic Maca,” an organization of over 30 families; they also provide temporary employment for more than 100 people in times of sowing, harvesting and drying. The farmers adhere to best farming practices, without using fertilizers or pesticides and using crop rotation to improve yield. Maca is grown on land at an altitude greater than 4105m, where the rock and limited soil is formed from calcite, dolomite and other minerals. The maca plant absorbs nutrients from the hills and rocks in which it grows for the 7 to 8 months before harvesting, making maca a mineral and nutrient rich food. We have an arrangement to ensure that a percentage of the money we send to purchase Tree-Harvest's maca is channelled to the local village school.

Gelatinized maca is maca powder which has been processed to remove most of the starch content. This concentrates the active ingredients, makes it more water soluble and makes it easier for the body to assimilate it.
Some of our Peruvian products were known as "the lost crops of the incas. They were little known plants of the Andes with promise for worldwide cultivation - this included maca, inca berries, lucuma, purple corn and yacon.

Yacón is a species of perennial daisy traditionally grown in the northern and central Andes from Colombia to northern Argentina for its crisp, sweet-tasting, tuberous roots. It has a slightly sweet, resinous, and floral (similar to violet) undertones to its flavour, probably due to the presence of inulin, which produces the sweet taste. Another name for yacón is Peruvian ground apple or, in Ecuador, Jicama. The plant produces a perennial rhizome, to which are attached the edible, succulent storage roots or tubers, the principal economic product of the plant. The edible storage tubers are large and typically weigh from a few hundred grams to over a kilo. The tuber is composed mostly of water and fructo-oligosaccharide, an indigestible polysaccharide made of fructose. Fructo-oligosaccharides taste sweet, but pass through the human digestive tract unmetabolised, hence have very little caloric value, but have a beneficial prebiotic effect.
Cacao Products

Our Peruvian cacao is cultivated by small farmer co-operatives. The Criolla variety is considered to be “the king of cacao” because it is the most ancient - it is not a hybrid - and produces high quality beans of fine flavours and aromas constituting an important percentage in the production of fine chocolate. Minimum possible processing is used with this bean, applying low fermentation and low temperature without roasting, by means of unique methods to maintain its natural purity and quality.

PRODUCTS FROM PERU
The Andes has traditionally been a source of excellent food and medicinal plants. In 1998 a co-operative was created to carry on this tradition, offering Andean natural, functional foods, of outstanding benefit to health, made from the highest quality raw material. They work with small farmers to cultivate, process and market products within the organic system of production, where careful steps are taken to process products as little as possible and at low temperatures, in order to preserve the nutritional and medicinal properties of the products. Tree-Harvest has worked with this co-operative since 2001. The important principles behind the Peruvian Co-operative, which Tree-Harvest supports, is that they work based on: i) quality rather than quantity, ii) diversity, fostering Andean mega-biodiversity, not homogenization, iii) promoting an organic system of production, iv) income distribution among the people that participate as suppliers, transformers, and traders, and v) social responsibility, following the principles of fair trade. They work in association with small farmers, generating employment for the local population; they offer advice on their organization as small entrepreneurs by providing training and financial support, thereby raising the living standards of the small farmers, while at the same time increasing their crop yield.

Ugandan Vanilla
Our Ugandan vanilla supplier runs a 20 hectare plantation near the Virunga National Park, just over the border from Uganda, where the rain forest provides the ideal climate to produce organic vanilla with a highly distinctive aroma. He also works closely with a group of 1000 local Ugandan farmers, who are helped with a credit facility to manage cash flow during the harvesting and processing season, as in the case of vanilla, it can often take up to 12 months from harvest to sale. He also supports the neighbouring Le Jardin Farmer Association which teaches farmers to produce vanilla, cocoa and spices to organic standards. The partnership has become the lifeline for many families in an area of extreme rural poverty. He aims to be 'renowned for outstanding products that are produced in harmony with nature and in a sustainable and fair relationship with the local producers.'

The powder is made from fully ripe and cured beans. The beans must be carefully air dried to about 12% moisture, to ensure that the resulting powder is free-flowing and bio-chemically stable. Cold milling further preserves the natural flavour of the vanilla. It results in a dark-coloured powder that is characterised by a full-bodied and intensive and highly complex aroma. The natural vanillin content usually lies between 3.5 and 4.0%.
