ALGAE AND SEAWEEDS

Algae are found in both fresh and marine waters. They are usually thought of as simple aquatic plants which do not have roots, stems or leaves, have primitive methods of reproduction and are carbon fixing, oxygenating organisms. They range in size from microscopic organisms, visible only under a microscope, to large seaweeds which may be metres in length. A Seaweed is a multi-cellular algae which has little or no vascular tissues; it is a dense green, brown or red sea vegetable, which can be used as part of a healthy diet and is used in herbal medicines in many traditional cultures.

Broken Cell Wall Chlorella from Japan
The Chlorella is ecologically grown outdoors on Ishigaki Island, a beautiful coral reef and mangrove jungle, located at the southern tip of the Japanese archipelago. The Chlorella grows in a pristine environment with tropical sunshine, pure air and fresh mountain spring water rich in minerals. Spirulina 

Spirulina is one of the highest protein-rich foods in the plant kingdom. It is a type of microalgae which has the ability to produce a high quality of complete protein and essential nutrients more efficiently than most other food sources. One tablespoon of spirulina contains 5-6 grams of bioavailable protein. Spirulina has been widely used in West Africa since the 1970's to treat malnutrition and was also popularized by NASA, for the American astronauts! It is energizing and detoxifying, containing phytonutrients, antioxidants, essential vitamins and minerals, including chlorophyll, zeaxanthin, beta-carotene, GLA, iron and the blue-green pigment phycocyanin. Spirulina can be added to protein drinks, green smoothies or simply mixed into water, alternatively it can be taken in tablet form.

Seaweeds - Multi-Cellular Algae

Seaweeds are a source of sustainable food, growing in all the oceans and do not need fresh water, soil, fertilizer or fossil fuels to produce them. Alginate is a natural fibre found in some types of seaweed, such as kelp. It is a jelly-like carbohydrate and is used for its water holding, gelling, emulsifying and stabilising properties. These properties are desirable in a wide range of applications in the food industry. They are said to aid digestion and reduce fat absorption. Seaweed is much more nutrient dense than any land vegetable. It is a unique combination of all 56 vitamins, minerals, electrolytes and trace elements essential for human health, absorbed directly from sunlight and the ocean, including folate, calcium, magnesium, zinc, iron, and selenium. More importantly, seaweed is a source of iodine. Seaweeds can be sprinkled on salads, rice and soups or used as an ingredient in soup. Healthy plants are hand-harvested from pristine waters and dried at low temperatures, concentrating the nutrients so that a teaspoon a day (2g) will deliver health benefits. They are also low in sugar, fat and calories, suitable for vegans and gluten free. Seaweeds are more easily digested and contain more vitamins, nutrients and minerals weight for weight than land plants.

Kelp is a general term used to describe a broad range of over 300 species of brown marine algae - the Laminariales -  that grow wild in shallow coastal regions all over the world

Kombu
Kombu and kelp are both names for brown seaweed. Kombu consists of flat or leaf like structures which grow in large clumps or ‘underwater forests’. Kelp is known for its quick growth rate and resilience, so harvesting is an extremely sustainable practice and has been a tradition for centuries. Kombu is rich in minerals including trace elements and anti-oxidants - it can contain up to 10 times as many minerals as land plants. It is exceptionally rich in iodine and is a natural dietary fibre. Kombu adds richness and body to soups, chowders, stews or salads and can be added to bread. Milled or finely diced kombu can also be used as a healthy alternative to salt due to its lower sodium content. Kombu is particularly popular in Japanese cooking. 
Organic Irish Kombu
Irish Kombu is a brown seaweed, hand harvested from the pristine water of the Atlantic, off the Irish coast. It is known as Laminaria digitata, tangleweed, oarweed or sea girdle. It has a lamina that is split into many "digits"; splitting increases with the wave action. The holdfast is very branched and broad giving strong attachment to rock. It can be found growing in depths of up to 10m. It has a savoury, sea flavour with hints of smoke. Kelp – Laminaria digitata – was traditionally used as a fertilizer and also, in the 18th Century, was burnt to create potash for the glass industry. It is still used as an organic fertiliser today. It is also used within the alginate industry for the extraction of alginic acid, which combines with water to form alginates - these are widely used in the food, pharmaceutical and medical industries.

Organic Sweet Kombu
Sugar Kelp (or 'Sugar Wrack') is a common 'kelp' seaweed which grows around the low water mark, attached to rocky shores up to 30 metres deep. It favours sheltered conditions. Sugar Kelp can live for up to four years and grows particularly quickly during early spring. It is a relatively large 'kelp' seaweed, dark browny-green, with a single broad frond that has a distinctive crinkly and wavy edge. Living up to its common name, Sugar Kelp is sweeter than other kelps, so is used in cooking all over the world, from Scotland to Japan. It is also known as Oarweed and Sweet Tangle. It is a delicate, mild flavoured sea vegetable which can be eaten raw, or added to rice, soups and stews, or used to make Sushi.

The Knotted or Egg Wrack grows up to 2 metres or more in length. The long fronds have a single, large air bladder in the centre of the frond. Along the edge of the frond grow numerous "lollipops".
Organic Wakame
Wakame is a common brown seaweed, found on exposed shores of Europe and North America. It can grow to 2m in length, though some have been recorded as 4m long. It is mainly used as a sea vegetable. It has a subtly sweet flavour and is most often served in soups and salads. Like all sea vegetables, it is easily digested and can be used extensively in cooking. It has many other common names: Wakame, Dabberlocks, Murlins, Winged Kelp and Honeyware. The Japanese refer to a different seaweed as Wakame - Undaria pinnatifida, which has a similar taste.

Irish Moss
Irish moss is not actually a "moss" but a type of seaweed that has been used for centuries in Ireland as a healing sea vegetable, prepared in soups and puddings. It is traditionally brewed as a broth to release its beneficial nutrients. It was a staple during the Irish famine of 1845-1852. It can also be soaked and blended as irish moss gel and added to various foods and drinks as a nutritive thickening agent. It is a very mucilaginous seaweed which wouldn't normally be eaten like other varieties. The unprocessed seaweed is considered nutritious, but is almost tasteless, with only subtle sweetness. It is a natural source of the polysaccharide carrageenan. This is used to make carrageenan extract, which is an ingredient that is widely found in the food industry as a gelling medium. Suitable for the vegan diet.

Organic Sea  Spaghetti
Sea spaghetti is also called thongweed or buttonweed and is another of the large brown seaweeds, although it is not closely related to the kelps or the wracks. It grows explosively up to 3 m long and can form dense mats near the shore which can cover large areas. The young shoots are very good to eat raw and taste a bit like asparagus.They grow from small button-like structures, from which a single front develops which branches into two; each branch again divides into two, gradually creating a multi frond seaweed. Sea spaghetti is only found in the East of the Atlantic, from Portugal to Norway, but it is most common around the British Isles. It is mild and crunchy, and best used rehydrated. As a vegetable, it can be quickly stir-fried with garlic until bright green, with just the addition of lemon or lime juice before eating.

Organic Dulse and Dulse Flakes
Dulse is also called Dillisk, Tang or Palmaria palmata. It is a cold water red algae that is found in many parts of Europe and the North Atlantic Coasts of America. It can grow in depths of up to 20m on both exposed and sheltered shores. It is reddish–brown to deep reddish–purple in colour and is leathery in texture, with flat fronds of up to 50cm long. Eating whole dulse seaweed is an ancient tradition in Scottish and Irish culture. The earliest recorded use of dulse was approx 1400 years ago by St. Columba’s monks. Dulse can be used whole or flaked in soups, chowder, fish dishes, breads, in salads, as a relish, deep fried and even in desserts. It can be eaten raw and when dried, makes a nutritious snack. It is a good source of vitamins and minerals and has high levels of protein and iron. Dulse is also used in the animal feed, health and cosmetics industries.
