Organic Agave Products

Agave Syrup is a natural fructose sweetener made from juice from the Mexican Agave plant. The filtered juice is then concentrated to a syrupy liquid, slightly thinner than honey. Its colour varies from light- to dark-amber, depending on the degree of processing. Nowadays a gentle, enzymatic procedure has been developed to convert the poly fructose into a simple fructose and dextrose syrup. It is produced in different grades, varying in colour and taste. The lighter variation is more neutral in taste and thus intensifies the natural taste of coffee, tea, fruit juices, confectionery, ice cream, yoghurts etc. – the darker one is more intensive in taste and is often preferred for use in cereals, barbecue sauces, pancakes and other dishes.

Organic Yacon Syrup

The yacon root crop (Smallanthus sonchifolius) has been grown in the Andes by the Inca and their descendants - it is indigenous to Bolivia, Brazil and Peru. Related to the sunflower, Yacon has large succulent roots which have a juicy, watermelon flavour, from which the syrup is produced. It is primarily used as a natural sweetener. Yacon syrup is high in fructo-oligosacharides, which are a pre-biotic. It is an exceptionally sweet, brown syrup which can be used like honey, molasses or maple syrup.

Date Syrup
Date syrup is a natural sweetener with richness and treacly depth. Should be used sparingly, as it is very sweet . Add to dressing on salad and vegetables, to sweeten stews or just drizzle over yoghurt or porridge. Also try mixing date syrup with tahini and spread on toast.

Maple Syrup Products

Pure maple syrup is a natural sweetener made from the concentrated juice which is extracted from the maple tree in springtime. Only the maple trees found in the northeast United States and in the eastern provinces of Canada produce juice that is sweet enough to be used in concentrated form for pure maple syrup. The sap is processed by heating to evaporate much of the water, leaving the concentrated syrup. Maple syrup is often eaten with pancakes, waffles, French toast, or oatmeal and porridge. It is also used as an ingredient in baking and as a sweetener. It has a unique, characteristic flavour.

Three species of maple trees are predominantly used to produce maple syrup: the Sugar Maple, the Black Maple, and the Red Maple. However, the sugar maple is the principal source because of the high sugar content in the sap of this species. Mature trees reach 300 to 400 years of age, 27 to 37 m in height, and 76 to 91cm in diameter. Maples are usually tapped beginning at 30 to 40 years of age. Each tree can support between one to three taps, depending on its trunk diameter. Maple trees can be continuously tapped for sap for over 100 years.

Coconut Palm Sugar is made from the sweet nectar of the coconut palm tree (coco nucifera). It is a pure and simple low-glycaemic cane sugar alternative, rich in nutrients and minerals. It is especially high in potassium, magnesium, zinc and iron and a natural source of vitamins B1, B2, B3, B6 and C. Coconut sugar and nectar are derived from evaporating coconut sap or sweet toddy through boiling in an open container where it is then allowed to cool and solidify. When heated, it first forms a thick, dark syrup, which has natural sweetness. With further heating, it forms fine brown granules. Coconut sap, if distilled, would turn into wine; if fermented, it would turn into vinegar. The coconut palm sugar is 100% coconut palm nectar - no cane sugar or maltodextrin are added. Coconut palm sugar can be used as a 1:1 replacement for cane sugar; it has a very low melt temperature with an extremely high burn temperature, making it perfect for confectionary uses. It also dissolves in liquids and wet dough without residue. Coconut palm sugar produces slow release energy, which sustains the human body through daily activities without regular sugar “highs” and “lows”. It is naturally low on the Glycaemic Index (GI).

Xylitol

Xylitol is a sugar alcohol, with a crystalline, granular structure, which can be used as a sweetener. It is a colourless or white solid that is soluble in water. It is derived from Xylose sugar, which is naturally occurring in many fruits and vegetables. The word xylitol comes from the Greek roots xylo- which means “wood” and “–itol” signifying sugar alcohols.It can be used as a natural alternative to sugar with its 1:1 sweetness ratio and 40% fewer calories. Tree-Harvest's Xylitol is derived from Birch bark, although it may be derived from other plants, such as maize.

Inulin

Inulin is a soluble, dietary fibre, originally extracted exclusively from chicory root but now from the agave plant. It has a sweet, pleasant flavour and is highly soluble, without raising blood sugar levels.
