FRUIT AND VEGETABLE POWDERS

Tree-Harvest offers a range of fruit and vegetable powders that can be used to flavour or enhance food and beverages or be used in food manufacturing. They can be used in drinks/smoothies, added to soups, stews and other meals for flavour, or used as a thickener or as a gluten-free flour substitute in baking. Vegetable and fruit powders can contribute vibrant colour as well. They have a longer shelf life than fresh fruit and vegetables, and are full of vitamins and minerals. They contain no artificial colours, flavours or preservatives. 

If good processing techniques such as low temperature vacuum/ air-drying or freeze-drying are used, vibrant fruit and vegetable powders can be produced which retain their full nutritional value, flavour and real colour. The challenge in manufacturing the powders is to maintain a high ORAC value (an indicator of antioxidant capacity) and polyphenols, whilst maintaining the nutritional profile, including fibre, vitamins and phytonutrients. Leafy greens and herbs are very delicate to handle and are at risk of spoilage or decay if not treated correctly. High sugar fruit powders are difficult to process because they become sticky and clumpy and cannot be dried at high temperatures as they can burn.  

Fruit and vegetable powders boost energy levels, reduce inflammation and improve immunity as well as being good for digestion. The dietary fibre component of them is important, as it has been shown to have positive effects on managing diabetes, digestive health, heart health and weight management. In addition, fibre alone can help improve palatability of a food product by adjusting product viscosity and providing structure when replacing fat or retained moisture. Fruit powders can compensate for lost flavour in low sugar products, correct bitter notes and promote better texture and they may be suitable as a bulking agent in products targeting sugar replacement. Vegetable powders contain carotenoids that can neutralize free radicals, to help prevent cell damage.

Slow-Dried Fruit
The fruit is dried at low temperatures of less than 34 degrees, to allow slow evaporation of almost all of the water contained in the fruit. The powders and whole fruits pieces are 100% pure; they are entirely natural, with no additional flavours, colours or preservatives.
1 kg of dried fruit is equivalent to 7-12 kg of fresh fruit.  


The “wolfberry fruit,” as goji berries are known in China, has been used in traditional Chinese medicine since around 200 B.C. They grow on a type of boxthorn plant that belongs to the Solanaceae plant family, which includes other fruits and vegetables like potato, tomato, aubergine and the chilli pepper. They are low in calories, high in protein for a fruit, fat-free, a good source of fibre and high in anti-oxidants, containing a wide range of phytonutrients and over 20 different vitamins and minerals. They can be eaten raw, dried, or in powder form.

Acai Berries are small, deep purple-coloured berries, native to Central and South America, (especially Brazil) where they grow in the Amazonian rain forest. They have been part of the traditional Brazilian and Amazonian diet for hundreds of years: for example, records show the Brazilian Caboclo Indian tribe sometimes consumed enough acai berries to make up more than 40 percent of their diet, enabling them to hunt and gather food for many hours without becoming hungry, tired or weak - this can be attributed to the high phytonutrients and fibre content of the acai berry. Acai berries contain high levels of antioxidants, trace minerals, vitamins, amino acids, plant sterols, dietary fibre and small amounts of essential fatty acids.

The baobab tree has an iconic status in Africa, rich in myth and legend. It is often referred to as the “upside-down tree” because its branches resemble roots sticking up. Many believed that it was turned upside down by an angry god, who grew tired of the tree’s arrogance. It is known as Africa's 'Tree of Life' and is native to the hot and drier regions of tropical Africa. A few mature baobab trees have been carbon dated , putting their age at over 1000 years and they are still producing fruit. So the baobab is a truly ancient food. It is the only fruit in the world that dries naturally on the branch. Baking in the sun for 6 months, baobab’s green, prickly, velvet-like coating transforms into a smooth, brown, coconut-like shell. The dry, white-ish pulp is inside its hard casing and contains no moisture whatsoever. It is simply harvested and sieved to produce a natural powder that is exceptionally nutrient-rich. It is a rich source of vitamin C, and is almost 50% fibre (two thirds soluble and one third insoluble, making it a powerful prebiotic). It contains more antioxidants than any other whole fruit. Baobab has a natural shelf-life of 3 years so needs no additives or preservative. It has a sweet and citrusy flavour.

The camu camu plant is a low-growing shrub found throughout the Amazonian rainforest in Peru and Brazil. Traditionally, it was harvested directly from the riverside, with locals pulling the berries from the shrubs directly onto their canoes. However, due to the rise in popularity in recent years, over harvesting became a problem, and now efforts are underway to farm the trees to produce a sustainable crop. Camu camu is a light orange to purplish red fruit with yellow pulp, which looks like a cherry. It is packed with more natural vitamin C than any other food source plus a range of phytochemicals and amino acids which have a range of therapeutic effects.The colour of the berry and the levels of vitamin C is dependant on the growing region in the Amazon and conditions such as soil composition, humidity levels and the amount of sunlight available to the plant. However, it can provide 30-50 times more vitamin C than an orange. The fruit has a very sour taste, and is consumed as a powder supplement. Camu camu extract contains maltodextrin, to create a more palatable product, which blends easily in water.

Wild Garlic, also known as 'Ramsoms' 'bear'or 'buckrams' or to give it it's Latin name, Allium ursinum, can be found growing prolifically in woodlands around the UK in the spring. April and May is the best time to pick wild garlic, preferably before the plants come into flower. The raw leaves have a strong pungent smell, but taste delicate and sweet when cooked, very similar to the domestic bulb, but not quite as hot on the palate. All parts of the plant (bulb, leaves and flowers) can be eaten, but most people only eat the leaves. The flowers are very edible and tend to have a stronger flavour than the leaves and make an attractive garnish. The bulbs are very small and are not normally picked.
